Standard Mead

A clean, well-fermented honey-based wine that is dry in character and shows a balance of honey character and fermentation aromatics.

The intensity and character of honey aromatics can vary widely. A clean fermentation character is important. No residual sweetness.

Pale gold to amber, depending on honey variety. Should be clear to brilliant.

Dry finish with little to no residual sweetness. Honey character and fermentation esters may be present. No off-flavors.

Light to medium body. Low to medium carbonation depending on style. Dry finish.

Standard meads are made from honey and water, sometimes with additives. The dry variant is fully fermented with minimal residual sugar.
